Koorka, is a small, starchy tuber from mint family. With dense, ivory-white flesh that turns creamy and tender when cooked, releasing a subtle herbal aroma. Valued for its earthy, mildly sweet flavour reminiscent of boiled peanuts, it is often stir-fried with spices, mustard seeds, and curry leaves, or paired with pork in traditional dishes.
